Stoneware (STAUB) holds heat longer and provides a more even, slower bake — ideal for casseroles, gratins, and slow-cooked baked dishes. It also doubles as oven-to-table serving. Nonstick carbon steel (USA Pan) heats faster, releases baked goods cleanly, and is the standard choice for cookies, layer cakes, breads, and sheet-pan recipes that need a flat, even bake.

USA Pan recommends hand washing for the longest pan life — the nonstick coating wears faster in dishwasher cycles. Warm water and a soft sponge are sufficient for most cleanups; soak briefly for stuck-on batter or sugar.

Avoid sudden temperature changes. STAUB stoneware is oven-safe, broiler-safe, microwave-safe, and dishwasher safe, but transferring directly from refrigerator to a preheated oven can stress the glaze over time. Letting the dish come up to room temperature before baking, or starting in a cold oven, is the safer pattern.
